Friday Focus: Prawn Stir-fry

Need a quick, healthy and easy recipe for tonight? We have the answer! Try this delicious and nutritional Prawn Stir-fry which will take from prep to plate just 15 minutes.

You’ll need two handfuls of quick-cook brown rice, one garlic clove, one tsp grated ginger, three spring onions, one pak choi, one handful of raw king prawns, one handful of beansprouts, and just a splash of soy sauce. The recipe serves one and contains only 264 calories, 35g carbohydrates, 10g fat with 22g of protein.
1) Boil the kettle and add a few handfuls of plain rice in a bowl. Heat oil in a pan and add crushed garlic clove and chopped spring onions.

2) Cover the rice with boiling water and microwave for 5 minutes. Whilst the rice is in the microwave add some pak choi to the pan, along with prawns and beansprouts.

3) Keep stirring until the prawns become pink and the spring onions have gone a light brown colour. Add the soy sauce and lemon juice to finish.

4) Drain the rice and serve with some grated ginger and a touch of mint on the top.
